Apricot Oat Bars

1/2 cup Water
1 cup Dried apricots Diced
3 tablespoons Light brown sugar (optional)
1/2 teaspoon Cinnamon
1 tablespoon Freshly squeezed lemon juice
3/4 cup Wild Oats Organic Unsalted Butter, softened
3/4 cup Light brown sugar
1 Wild Oats Large Omega-3 Egg
1 teaspoon Vanilla extract
1 1/2 cups Organic rolled oats
1 1/4 cups Organic unbleached flour
1/4 cup Walnuts, finely chopped
1 teaspoon Baking powder
1/4 teaspoon Sea salt

Steps

1. Preheat oven to 350F. Lightly butter an 11x7 inch baking pan.

2. Heat water in a saucepan, add the apricots and sugar. Stir occasionally and cook for 3 to 5 minutes, until they are soft. Allow to cool and stir in cinnamon and lemon juice. Set aside.

3. In a large bowl, cream together butter and light brown sugar. Mix in egg and vanilla.

4. In a separate bowl, mix together oats, flours, walnuts, baking powder and salt.

5. Mix dry ingredients into butter mixture. Press 2/3 of the batter into the baking pan. Spread apricot mixture over the batter and crumble the reserved batter over the apricots.

6. Bake for 20 to 25 minutes or until golden brown. Cool and cut into bars or squares.

Variation

Substitute 1 1/3 cup of organic raspberry preserves for the apricot mixture.
